Xiao Long Bao

I've mentioned xiaolongbao several times in the blog. I figured I would also describe  what that is. Xiao is small. Long is dragon. Bao is our friend eddie's last name and a style of dumpling. Bao also means bag. 

Colloquially it is called a soup dumpling. The lure of xiaolongbao is that it is a steamed dumpling with a delicious meat surprise floating in a flavorful soup. They are just delicious. 

Our time in shanghai was mostly spent seeking out the best of these little baos. Well, we found it. 

Nestled near people's square, this place makes the Bao in front of you and it is just delicious. 


This is a delicate process and they have it down. Anyone visiting us in NYC needs to come with us to a Bao place so they can discover the wonder.
